Unripe Plantain Flour Cake is a sweet and delicious cake made with a blend of unripe plantain flour and all-purpose flour. 2 cups unripe Plantain Flour

1 cup all-purpose flour

1 cup sugar

1 tsp baking powder

1 tsp baking soda

1 tsp ground cinnamon

1/2 tsp salt

1 cup coconut milk or other milk

1/2 cup Power Oil

2 large eggs

1 tsp vanilla extract

1 cup chopped nuts or raisins (optional)


  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch (23 cm) cake pan.
  2. In a large mixing bowl, whisk together the unripe plantain flour, all-purpose flour, sugar, baking powder, baking soda, cinnamon, and salt.
  3. In a separate bowl, beat the coconut milk, oil, eggs, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and mix until just combined.
  5. Stir in the chopped nuts or raisins, if using.
  6. Pour the batter into the prepared cake pan and smooth out the top.
  7. Bake for 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  8. Let the cake cool for 10 minutes before removing from the pan.
