Ingredients
2 cups unripe Plantain Flour
1 cup all-purpose flour
1 cup sugar
1 tsp baking powder
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp salt
1 cup coconut milk or other milk
1/2 cup Power Oil
2 large eggs
1 tsp vanilla extract
1 cup chopped nuts or raisins (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9-inch (23 cm) cake pan.
- In a large mixing bowl, whisk together the unripe plantain flour, all-purpose flour, sugar, baking powder, baking soda, cinnamon, and salt.
- In a separate bowl, beat the coconut milk, oil, eggs, and vanilla extract.
- Add the wet ingredients to the dry ingredients and mix until just combined.
- Stir in the chopped nuts or raisins, if using.
- Pour the batter into the prepared cake pan and smooth out the top.
- Bake for 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Let the cake cool for 10 minutes before removing from the pan.
