Description

Ingredients
1 cup Melon (Egusi) seeds
1 onion, chopped
2 tomatoes, chopped
2 bell peppers, chopped
2 cups leafy vegetables (spinach, kale, etc.), chopped
2 cups Power Oil
2–3 cups water or chicken/beef broth
1–2 habanero peppers (or to taste)
1–2 tbsp ground crayfish (optional)
Salt and pepper to taste
Instructions
- Grind the egusi seeds into a paste using a food processor or mortar and pestle.
- Heat the oil in a large pot over medium heat. Add the onion and cook until translucent.
- Add the chopped tomatoes, bell peppers, and habanero peppers. Cook until the tomato has broken down.
- Stir in the egusi paste and cook for 5-7 minutes, stirring frequently, until the oil begins to separate from the paste.
- Pour in the water or broth and bring to a boil. Reduce heat to a simmer and add the chopped leafy vegetables.
- Season with salt, pepper, and ground crayfish (if using). Cook for 10-15 minutes or until the soup has thickened and the leafy vegetables are tender.
- Serve with rice, fufu, or any starchy food of your choice.
